Tarta mousse de turrón / Nougat mousse cake

Hola a todo el mundo y ¡FELICES FIESTAS! desde PETIT ET GOURMET

Os traigo una tarta ideal para estas fechas, al ser una mousse es muy ligera para después de las comidas copiosas, no se hace nada empalagosa. También es una buena idea hacer esta tarta con las pastillas de turrón que nos sobran y siempre se acaban almacenando. Así pues aquí os dejo la receta, espero que os guste y a disfrutar con el postre.

I bring you a perfect cake for these dates, because is a mousse very light for after heavy meals. It is also a good idea to make this pie with pills  of nougat  that  we always store. I hope you like and enjoy with dessert, you are here the recipe.

Ingredientes
Para la base de 23 cm de diámetro:
- 1 paquete de galletas maria o 20 digestive trituradas
- 75 gr de mantequilla derretida

Para la mousse:
- 2 huevos, separando las claras de las yemas
- 80 gr de azúcar
- 300 gr de turrón
- 150 ml de leche
- 600 ml de nata para montar muy fría
- 1 pizca de sal
- 6 hojas de gelatina neutra

Para la decoración:
- Cacao en polvo, fondant y glasa

Ingredients
For the base of 23 cm in diameter:
- 20 sweet-meal crushed biscuits 
- 75 gr of melted butter

For the mousse:
- 2 eggs, separating the whites from the yolks
- 80 gr sugar
- 300 gr Nougat
- 150 ml of milk
- 600 ml of very cold whipping cream
- Pinch of salt
- 6 gelatin sheets

For the decoration:
- Cocoa powder, fondant and royal icing

Preparación
- Forrar un molde con papel vegetal, triturar las galletas y añadirle la mantequilla derretida del microondas, cuando se haga una pasta la pondremos en nuestra base del molde ajustándolo bien. Reservar en nevera.
- En un bol con agua fría ponemos a hidratar las hojas de gelatina. En un cazo ponemos el turrón en trozos con la leche, y lo derretimos a fuego lento.
- En otro bol batimos el azúcar con las yemas y añadimos un poco de crema de turrón derretida. Removemos para que no se cuaje y ponemos la mezcla dentro del cazo y lo dejamos un par de minutos al fuego.
- Escurrir las hojas de la gelatina e incorporarlas de una en una a nuestro cazo. Reservar fuera del fuego.
- Montar las claras con la pizca de sal a punto de nieve y reservar en la nevera.
- Montar la nata de forma que quede semimontada y no muy dura. Añadir poco a poco la mezcla del turrón que ya estará templada y mezclar con las varillas manuales.
- Por último incorporar las claras a punto de nieve a la crema con movimientos envolventes.
- Verter la mezcla en el molde con la base de galleta y dejar reposar en la nevera de un día para otro.
- Desmoldar, decorar con cacao en polvo tamizado y algunos detalles navideños. Conservar la tarta en la nevera hasta su uso.

Preparation
- Prepare the mold with a baking paper, crush the biscuits and add the melted  when all will be a paste put in in the our mold adjusting that well done. Reserve in refrigerator.
- In a bowl with cold water put the gelatin sheets to hydrate it. In a saucepan put nougat pieces with milk, and melt it over low heat.
- In another bowl we beat the sugar with the egg yolks and add some melted nougat cream. Mix it and put the mixture into the saucepan around two minutes.
- Drain gelatin sheets and incorporate them one at a time to our bucket. Book off the heat.
- Beat the egg whites with a pinch of salt until stiff and reserve in the refrigerator.
- Whip the cream not very hard. Gradually add the mixture of nougat ( will be warm not hot) and mix with hand rods.
- Finally add the egg whites until stiff cream outflanking.
- Put the mixture into the mold with the biscuit base and leave in the fridge overnight.
- Decorate with sifted cocoa powder and some Christmas details. Keep the cake in the refrigerator until use.

Gracias Julia por pasar a saludarme, igualmente te deseo a ti un 2015 colmado de buenos logros y salud.Con respecto a tu receta de hoy, y sin haberla probado, te digo que es excelente por los ingredientes que tiene: la nata le dará untuosidad y las claras aportarán aire y lo harán liviano, además sin gelatina y frizada se convierte en un rico helado que no se cristalizará.
